Flat leaf Parsley is packed with iron and calcium and is perfect for adding to fresh salads or for making Tabouli.  Also delicious in fresh juices!    



Lebanese Tabouli


    • 3 bunches finely chopped parsley
    • 1 cup chopped fresh mint
    • 2-3 tablespoons fine bulgur or boiled cracked wheat
    • 1 chopped firm tomato
    • 1/2 onion or 2 eschallots chopped
    • 1/2 cup extra virgin olive oil
    • 1/4 cup fresh lemon juice
    • salt and pepper to taste


If using cracked wheat, boil until just soft, drain and put aside.  Mix the salt and pepper with the chopped onions and set aside – this brings out the sweet juice of the onion.  Prepare the chopped parsley and mint and set aside.  In a large bowl, mix Bulgur (or boiled cracked wheat), chopped tomatoes, chopped onions/eschallots with lemon juice, salt and pepper. Add to them the parsley and mint and olive oil and mix, adjusting seasoning by adding more oil and lemon if desired. Serve cold with flat breads and hommous – delish!
